Porcini Mushroom & Truffle Risotto with Brussel Sprouts & Zucchini

牛肝菌松露燉飯佐孢子甘藍與雙色櫛瓜

落落長的名字,呈現著純粹的義式口味。
將遠從義大利來的乾燥牛肝菌、松露醬、燉米,搭配著台灣產的黃和綠櫛瓜,以及美洲進口的孢子甘藍細細烹煮;並以蘋果、洋蔥和紅蘿蔔熬出清甜的高湯,讓每一粒米都吸飽自然鮮味,最後加入七色胡椒、月桂葉、玫瑰海鹽與帕瑪森乳酪輕輕挑起襯出食物原味。
